Burt's Texas Garden: This week we will have Onions, Beets, Potatoes, Yellow Squash, Zucchini, Cocozelle Squash, Acorn Squash, Butternut Squash, Cherry Tomatoes, Peppers, Fresh Herbs, Collard Greens, Swiss Chard, Brussels Sprouts, Okra, and Green Beans. In addition, we'll have, Bread & Butter Pickles, Pickled Beets, Chow Chow, Jalapeno Jelly, and Fresh Eggs.

Munkebo Farm: parsley, leeks, oregano, chard, onions, lemon pies, apple pies, chicken pies, homemade bread, Italian torrone nougat, pecan pralines, lemon curd and lemonade. Laverne's Vegetable Patch:This week for the market I will have salsa, eggs, yellow squash, zucchini, spaghetti squash, butternut squash, cucumbers and plums. To look forward to a little later in the season: spaghetti squash, cantaloupes, watermelons, southern peas and of course TOMATOES! Also, the season's first batch of dill pickles will be ready next week (June 10th)! CORN HAS ARRIVED

Squash, Squash, Squash 'tis the season of squash. It won't last. By the time you think you can't eat one more bite it will be out of season. Here are some tips on what to do with left over cooked squash. One of my little ladies told me to just add an egg and some flour to the leftover squash and cook it up in some bacon grease like a pancake. Well, I took it a little further. Make up a batter, like a fritter batter or pancake batter, and try the following add ins:

Pumpkin Pie Spices-clove, cinnamon and nutmeg, then top it with Manor Honey for breakfast. Roasted pecans are good in this one.

Add Italian seasoning and top with a marinara or chopped tomatoes and basil.

Put in chopped parlsey, onion and a little nutmeg and serve with applesauce like latka or potato pancake

Top with grated cheese, I like parmesan or a sharp cheddar

Use your imagination, left over ham or corn or....

THANK YOU FOR ALL YOUR LETTERS, CALLS, AND COURTROOM VISITS IN EARLY MARCH IN SUPPORT OF TECOLOTE FARM. YOUR INPUT CONTINUES TO MAKE A MEANINGFUL IMPRESSION ON THE COMMISSIONERS' COURT.THE COURT HAS RESCHEDULED THE PITRES' DATE ON THE AGENDA TO 4/14, AT WHICH TIME COMMISSIONERS WILL VOTE YES OR NO ON JUDGE BISCOE'S PROPOSED PLAN.Background:Tecolote Farm has been providing locally-grown, organic vegetables to the Austin area since 1993. It is a vital part of and gives much value to our community. Recently they have suffered a water crisis. Water levels in Tecolote Farm's well dropped dramatically, and then went completely dry, soon after Travis County installed nearby high-production wells used to water recreation fields a few miles away. At first, Travis County officials indicated that if they had caused the problem, they would help fix it. Since that time, several highly-qualified hydrogeologists, including ones with extensive experience in studying and working with the local aquifer at issue have confirmed what Tecolote has always known: that the high-volume pumping by the County was at least a significant contributor of what has happened to Tecolote's water supply. Tecolote Farm is just asking for access to the groundwater that they always had, and they are willing to exchange that access for providing produce to County Jail inmates.This coming Tuesday, April 14, the Travis County Commissioners' Court will be considering Judge Biscoe's plan to help solve a problem that they (at least in part) created. This is where your input is needed and we urge you to act via the following options: Option 1. Do you have formal dresses, shoes, slacks, shirts or accessories that simply hang in your closet? Please consider donating it to the Prom Closet sponsored by the Manor ISD Student and Family Support Services Department. Many students do not attend the Prom (April 25) because of the expense of formal wear. Bring your items to the market or to the Chamber Office in Independent Bank and we will make sure the items are delivered to the Family Support Dept. We have already collected several items and we have room to collect and deliver more.

If you are tired of that plain green salad for dinner you will enjoy the extra nutrition and pizzazz that the figs and walnuts (pecans-buy local) add to this spinach salad. It will complement almost any meal. Enjoy!
Figs, Walnuts, (Pecans) and Spinach Salad
My figs are thumbnail size. I don't know if we can get spinach and figs at the same time. If you have some dried from last year it is all good! Or save this recipe for when the figs come in. DL

Prep and Cook Time: 15 minutes
Ingredients:
½ medium onion, sliced thin (or green, from the market)
2 TBS white wine or apple cider vinegar
1 cup hot water
5 oz baby spinach (from the market)
2 TBS balsamic vinegar
½ tsp honey (from the honey man at the market)
2 TBS extra virgin olive oil
salt and cracked black pepper to taste
8 dried figs, sliced (fresh soon!)
2 TBS chopped walnuts (let's make that pecans)
Directions:
Slice onion and let sit for at least 5 minutes to enhance its health-promoting properties.
Marinate sliced onion in 2 TBS white wine or apple cider vinegar and hot water for 10 minutes while preparing rest of ingredients.
Rinse and dry baby spinach. If you have a salad spinner that is best, otherwise, dry with paper towels. This will avoid dressing getting diluted.
Whisk together balsamic vinegar, honey, salt and pepper, drizzling in the olive oil a little at a time at the end. Toss with rest of ingredients and serve. Serves 4

Green Spring Fling Thing

Yep, it is that time of year again. Manor Farmers' Market will hold our annual Spring Festival on Wednesday, March 18th from 4 to 7PM. Get your Garden Party started!

This year, as usual, we will have vegetable and herb transplants for sale. Also, compost and the worm dude will once again grace us with his presence. Gardening demos and vegetable games will be provided by The Sustainable Food Center. We will have live music with Chrissy and maybe Jimmy Joe too.

Get beautiful vegetables picked the day of the market less than ten miles from downtown Manor. Homemade tamales, salsa jellies and pickles of all sorts. Farm fresh eggs from healthy chickens that run around in the fresh air and sunshine. Humanely raised pastured beef, pork and poulty from Richardson Farms as always anitbiotic and hormone free. They even grow the food for their animals.

Save our Manor farmers

Hello Folks,

Katie and David have been friends of mine for years. Their oldest son and my youngest daughter went to school together and we would carpool. They got me hooked on locally grown, seasonal organic vegetables years ago. Manor Farmers' Market is the direct result.

These are hardworking folks growing great vegetables for Austin and Manor residents. They have approximately 300 Community Supported Agriculture subscriptions. This means they provide about three hundred local families with a basket of fresh produce every week.

We talk about going green, sustainability and food miles. Well, this is it. A thirteen minute drive from Tecolote Farm to my table.

Please take a minute to look at the information below and write your commissioner to support our local food system.

Action Alert - Help Solve Tecolote Farm’s Water Crisis
Please Email or Call Your County Commissioner Now


Tecolote Farm has been providing locally-grown, organic vegetables to the Austin area since 1993. It is a vital part of and gives much value to our community. Recently they have suffered a water crisis. Water levels in Tecolote Farm’s well dropped dramatically, and then went completely dry, soon after Travis County installed nearby high-production wells used to water recreation fields a few miles away. At first, Travis County officials indicated that if they had caused the problem, they would help fix it. There is some hope. This coming Thursday, March 5th, the Travis County Commissioner’s Court will be considering whether to make good on the County’s promise to help solve a problem that they (at least in part) created. There are a number of workable options that have been mentioned. However, we are still facing an uphill battle. This is where your participation is needed.

Call to Action

Option 1. Email the Travis County Commissioners

Please send an email very soon – preferably by this coming Monday (3/1) – but by no later than Wednesday (3/4), letting your County Commissioner (or all of the Commissioners including the County Judge) know how important it is to you that the County step up to the plate and help solve Tecolote’s water crisis which they had a hand in causing. Below is a list of the names of the email addresses of the County Judge and the four Commissioners. Please send an email to your commissioner and a cc to the County Judge. If you don’t know who your county commissioner is, just send the email to all of them.

It is very important to me that Travis County does what it takes to assure that we keep the local farm and not contribute to its demise.

The meeting at which this issue will be considered is scheduled for Thursday, March 5, 2009, at 1:30 PM.
