Th announcement didn't go through yesterday so I'm trying again this morning. Dang internet.
For the market this week we have lots and lots of watermelon and cantaloupe for the fourth of July festivities. Many different varieties of peppers large and small, sweet or hot , in a wide array of colors. There are still plenty of tomatoes, cucumbers and potatoes for salads. Okra is coming in really well now with the heat. We have a great deal of squash, yellow straight or crook neck, zucchini, Lebanese, white scallop, patty pan, acorn, butternut, spaghetti and cashaw. All of them are great on the grill.
Last night we cut the yellow squash length wise, brushed brushed w/ olive oil, sprinlked kosher salt and fresh ground black pepper and put them on the grill. Fast, easy and delicious.
Also, we made stuffed jalapenos. We used a package of cream cheese, three stripes of lime zest chopped fine, the juice of half a lime and a small handful of chopped fresh cilantro. Mix and set aside. Cut jalapenos in half and clean out membrane and seeds. Fill cavity with cream cheese mixture. Put a shrimp on top and wrap the whole thing in half a slice of bacon. Secure with toothpick. Grill cut side down until bacon is crispy. Turn gently with tongs, don't squeeze or the cheese oozes out and grill til bacon is crispy on the bottom.
Sliced tomatoes with basil, olive oil and balsamic vinegar. Watermelon, cantaloupe and fried catfish from a friend. Simple, local, tasty meal. In-laws are visiting from Nevada couldn't say enough about how good it all was.
