Market Offerings for Dec. 30

Burt's Texas Garden: Another year has come and (almost) gone! For the last Wednesday market of 2009, we will have Potatoes, Turnips and Turnip Greens, Mustard Greens, Broccoli, Cabbage, Cauliflower, Spinach, and Lettuce. In addition, we'll have Dill Pickles, Pickled Beets, Chow-Chow, and Jalapeno Jelly. Please note that Burt's Texas Garden will be taking a little vacation from the market during the month of January, so stop by this week to pick up your canned goods and veggies. We'll see you again in February 2010.

Laverne's Vegetable Patch: Addictive Salsa & Eggs this week.

Munkebo Farm: This week will have cabbage, green onions, escarole, spinach, dandelion greens, artichoke dip, basil walnut pesto, candied nuts, apple pie or berry pie and bread.

Windy Acres Eggs: Joining us from Taylor bringing you and your family all natural, free range eggs from happy, healthy chickens. Outside in the fresh air and sunshine just like God intended. Duck eggs available too. Great for baking.

Kala's Kuisine: A native of Nepal, Kala brings us new varieties of salsas, curries, dips, sauces & chutneys. Also, momos, samosas and salads. Samples available. MANY ARE GLUTEN FREE. This week Kala will also have Tomato-Basil Soup for sale.

New Vendors @ Market

It may be a small market this week but we have a lot to offer you for your holiday dining & festivities.

Burt's Texas Garden: 'Twas the night before Christmas (Eve), and all through the market...all the townsfolk stopped by for some last minute shopping! Yeah, yeah...it doesn't exactly rhyme, but you got to admit that it's not bad for a farmer! Windy Acres Eggs: Joining us from Taylor bringing you and your family all natural free range eggs from happy, healthy chickens. Try them, you'll like 'em.

Just Desserts: "You Bake" Whole Wheat dinner rolls made with Richardson Farms fresh ground red winter wheat flour and Manor Honey. Orange rolls with made with Texas Oranges and Sticky Buns made with Pecans from Katy & Gil Burrell's front yard. Take them out of the frigidaire for about an hour to rise double in size then bake yourself! Corn Bread (already baked) made with home made buttermilk. Our dairy comes from Stryk Jersey Farm in Schulenburg and the eggs are from our farms right here.

Merry Market Basket Winner

Kris Lloyd, a life long resident of Manor, was the big winner of our Merry Market Basket. She teaches at Manor Elementary and helped Denise put vegetable gardens in the school there. Kris also runs the after school program Project Mustang at Manor Elementary. Terra of Goodwin Homestead is selling cookbooks at the Market compiled by Kris and her students.

Seems like a good fit.

Market Offerings for Dec. 9

Any of you see the movie Fresh this weekend? Several of us Manor marketeers went to see it Saturday night in support of Edible Austin's Eat Local Week. Buy from your local family farms, know your farmers, know your food.

This week at the Market you'll find:

Burt's Texas Garden: Ahhh, Mother Nature! As expected, the hard freeze the other night wreaked havoc on our gardens. We were able to harvest the remainder of our Tatuma and Zucchini squash and Hot Peppers beforehand though. So, this will be the last week for each of those items. We still have plenty of the cold-weather-loving turnips and turnip greens, mustard greens, lettuce, broccoli, collard greens, radishes, and new for this week CABBAGE. Also, as we had to harvest all of our still-green tomatoes, we have a new batch of CHOW-CHOW made up. In addition, we'll have the usual fare of Dill Pickles, Pickled Beets, and Jalapeno Jelly.

Richardson Farms has antibiotic and growth hormone free beef and pork for sale. We also have a PDF ORDER FORM that you can download and fax or email back to us with your meat selection and we will be happy to deliver it to one of our Farmers Markets or you can pick it up at our farm. All of our chickens (broilers and layers) are "Pastured", meaning, they are out on the grass/fields and are able to scratch the earth and eat as many bugs and/or grass that they can find! We Give Thanks For Our Abundance

As winter sets in this holiday season, we're all hoping that we can keep eating local foods. We're thankful here in Central Texas that we can find fresh broccoli, brussel sprouts, cabbage, cauliflower, winter squash, kale, peas, mustard greens, cauliflower, carrots, turnips, lettuce, spinach, leeks and more. Beyond fresh produce there's always local eggs, dairy products, honey, meats, beans, grains, jams, pickles, and other home canned or dried goods. By focusing our attention on preparing and eating these winter foods over the coming months we deepen our connection to the natural flow of the seasons and to the earth itself.

As Thanksgiving approaches, we give thanks for our abundance and for the ongoing support so many people are giving to family farmers, even in these hard economic times. Your growing commitment to creating a sustainable food system is one of the blessings for which we are truly grateful. We hope that at least a few local foods find their way to your holiday feast this year.

In addition, we'll have Dill Pickles, Pickled Beets, Jalapeno Jelly, and Farm Fresh Eggs. We are sold out of Chow-Chow for the rest of the season.

Richardson Farms: All natural, humanely raised beef, pork and poultry from their family farm in Rockdale. Sausages: Italian hot or sweet, breakfast in link or pan, smoked beef or pork. Chops, ribs, steaks, cutlets, ground meats and roasts. Truly exceptional quality while supporting the local ranchers and economy.

Kala's Kuisine: I will bring all my award winning salsa's, Almondaise, hummas, cilantro chutney, curry sauce and always the samosa and momo's. These are my standard products. I do not know if you knew that I got 9 awards on my salsa's this years hot sauce contest. 5 in Austin, 2 in Houston and 2 in Alberkerky. Curry-chipotle got first place, Mirchi-masala got first place and curry tabasco got second place and mango chutney got third place on all the events. That is why I said award winning salsas.

Market Spotlight: Munkebo Farm's Legacy

Munkebo is the village in Sweden where my great grandmother was from. I recently went to Sweden for a month and found my relatives (3rd cousins). The last communication was in 1907 between my great grandfather and his brother through a letter. The saved letters dating from 1884 are how I was able to find them. They still live on the family farm in a village called Basthult. The older folks are retired from a small dairy business (18 cows) and their children and grandchildren help with the timber business. They wait 100 years from the time they plant to harvest. The older lady, Sigrid, has a loom and made her own Swedish folk dress out of flax that her mother grew and wool for the skirt and vest. She hand hammered the sterling broach that holds the purse to her skirt and also hammered the decorations for her shoes. She likes to cook and has a special talent for cookies and pastries. Some of the family belong to a hunting club that splits the take of moose and deer, which they butcher themselves.

Throughout Sweden most homes are heated with radiant heat produced from running hot water through radiators in the rooms and pipes in or under the floor. My cousins use wood chips from their woods to feed their furnace twice a day (the hopper looked like it holds a feed sack's worth of chips). I noticed no soot coming out the stack, but of course there is CO2. The houses are built with very thick walls. They all have super efficient windows and because the sills are so deep; they always have plants on them.

The people that I met in Sweden and other places in my travels have one thing in common, most are not big consumers and keep appliances long periods of time through repair and proper maintenance. They don't redecorate or change out their furniture or car every few years either. They are frugal compared to most people in America. The cities have a definite delineation between them and the countryside, no sprawl or billboards. There are no big box stores, mostly family businesses. They have an excellent train system and in the cities most walk, ride the bus or bicycle.

I know that world travel isn't green, but when you look at the educational opportunities and cultural exchange it becomes acceptable to me in moderation.

Local Farms Provide Veggies for Thanksgiving Luncheon

The East Rural Community Center Thanksgiving Giving Luncheon will be on Fri., Nov. 13th from 11 to 2 at 600 Carrie Manor Street in Manor, TX, next to the library. Everyone is welcome. The luncheon features a savory turkey dinner with all the trimmings. Decorative placemats for the feast were made by the talented students of Anita De La Cruz at Manor's Decker Middle School. This year we are excited to be serving vegetables grown right here from Burt's Texas Garden and Hands of the Earth Farm! Many thanks to all of the volunteers and contributors who make this special community event possible.

Spicy Stir-Fried Radish Greens and/or Swiss Chard

(Makes 2 servings, can easily be doubled. Recipe created by Kalyn with some chard-cooking inspiration from Vegetables Every Day.)

8-10 ounces radish greens and/or swiss chard, washed and cut into 1/2 inch slices
2-3 tsp. peanut oil
2 large garlic cloves (for seasoning the oil)

sauce mixture:
1 T soy sauce (I like Kikkomans)
1 tsp. rice vinegar (not seasoned)
1 tsp. Agave nectar
1/4 tsp. (or less) Sriracha sauce or other hot sauce

Wash and dry radish greens and/or swiss chard. (I used a salad spinner.) If desired, soak greens for about 30 minutes in very cold water. (This makes sure they're crisp for the quick stir-frying.) Working in batches, cut greens crosswise into 1/2 inch slices.

Mix together sauce ingredients and set aside. Preheat the wok or large, heavy frying pan until it feels very hot when you hold your hand there, then add the oil. When oil looks shimmery, add the garlic cloves and cook about 30 seconds, making sure garlic doesn't start to brown. Remove garlic and discard.

Add chopped radish greens and/or swiss chard all at once and immediately begin to stir-fry, turning greens over and over just until they are almost all wilted. (For me this was only one minute, but I have a great gas stove with a burner with really high heat.) When greens are almost all wilted, add sauce ingredients, stir, and cook 30 seconds more. Serve hot.

Market Offerings for Nov. 4

Lavern's Vegetable Patch, Munkebo Farm, and Burt's Texas Garden: This week we should have Yellow Squash, Zucchini Squash, Turnip Greens, Turnips, Canola Greens, Collards, Radishes, and Hot Peppers. In addition, we'll have Dill Pickles, Pickled Beets, Chow Chow, Farm Fresh Eggs, and Jalapeno Jelly. Also bell peppers, mild hatch green chili, garlic, parsley, oregano, basil, lemon thyme, basil-walnut pesto, blue cheese dressing, apple crumble pie, berry crumble pie and bread, greens, salsa, and cucumbers. Plus a couple of bouquets of flowers! PRETTY!

Richardson Farms will not be at the Farmer's Market on Wed. Nov. 4th. as we will be loading the last 60 of our turkeys into the trailer to be taken to the processor. We leave at 3:30 AM....so, it is a must to load them late in the evening before. Thanks for your interest in Richardson Farms Meats.

Mayan Hot Chocolate

A decadent but healthy cool weather treat.

Ingredients:
1 c cooked butternut squash pulp
3 1/2 c milk
3 oz dark chocolate
3 oz semisweet chocolate
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp freshly grated nutmeg

Preparation:
1. In a blender, puree the squash with one half milk until smooth.
2. In a large saucepan, mix remaining half of milk, chocolate & spices.
3. Stir over low heat with a wire whisk until the chocolate is melted, then add pureed squash. Do not boil.
4. Strain through a coarse sieve to remove any trace of squash fiber before serving

Food of the Week

Food of the Week . . . Cauliflower
Did you know that along with its wealth of vitamins and minerals, cauliflower, like the other cruciferous vegetables, contains powerful sulfur compounds that have repeatedly been found to help prevent cancer? Since 1993, the National Cancer Institute has been demonstrating that prevention, rather than cure, is the way to decrease deaths related to cancer. And they have found the way to prevention is eating the proper foods! Research on the prevention of cancer, as well as diabetes, heart disease, and obesity, all points strongly to the food we eat as a factor that has the potential to cut back dramatically on the rates of these chronic diseases. And some of the best foods for disease prevention are the sulfur-containing cruciferous vegetables, such as cauliflower. These vegetables contain compounds, including sulforaphane and isothyiocyanates, that help the liver to neutralize potentially harmful cancer-causing compounds and to suppress tumor cell growth and the movement of cancer to other parts of the body (metastasis).

5-Minute Healthy Sauteed Cauliflower

Enjoy the extra flavor and health benefits from combining cauliflower with turmeric for this easy-to-prepare, great-tasting side dish that will complement almost any meal. Turmeric has long been recognized as a powerful anti-inflammatory in both Chinese and Indian systems of medicine, and modern scientific research continues to reinforce the benefits of this tasty spice. (I use tumerice to color soups, beans & rice.DL ) One serving of this dish also provides 181% of the daily value (DV) for vitamin C, 46% DV for vitamin K, and 33% DV for folate. Enjoy!

Prep and Cook Time: 5 minutes

Ingredients:
1 lb cauliflower
5 TBS low-sodium chicken or vegetable broth
1 tsp turmeric
Mediterranean Dressing
3 TBS extra virgin olive oil
2 tsp lemon juice
2 medium cloves garlic, pressed or chopped
sea salt and pepper to taste

Optional:
1 TBS chopped cashews (pecans)
2 TBS Parmesan or Romano cheese
2 TBS chopped cilantro
1 TBS mango chutney
1 TBS chopped cilantro


Directions:

Cut cauliflower florets into quarters and let sit for 5 minutes to bring out their hidden health benefits.
Press or chop garlic and let sit for 5 minutes.
Heat 5 TBS broth in a stainless steel skillet on medium heat.
When broth begins to steam, add cauliflower and turmeric and cover. For al dente cauliflower, cook for no more than 5 minutes.
Transfer to a bowl. For more flavor, toss cauliflower with the remaining ingredients while it is still hot. (Mediterranean Dressing does not need to be made separately.)
Serves 2

Fall Vegetables & International Spinning & Weaving Week Demo on Oct. 7


Sharon Bramblett will demonstrate an ancient spinning tool and a modern spinning wheel this week in honor of international Spinning and Weaving Week . Sharon shears her llamas once a year and has the fleece processed by Texas Fiber Mill near McDade. She then spins the clean fleece into yarn. In addition to her demonstration, Sharon will have samples of the fleece and spun yarn for Market visitors to enjoy. The ancient art of spinning connects us to our ancestors. Stop by the Manor Farmers Market this week to learn more about this traditional craft.

Frank Toussaint is a local beekeeper living in the Manor area. His "beeyards" are located in the Blake-Manor, Littig and FM 973 areas. Frank sells his local honey at the Manor Farmers Market on the first Wednesday of each month. He has been keeping bees for over 35 years and is more than happy to provide assistance to others wanting to learn. Stop by the Market to chat with Frank and take home some of his delicious local honey.

The Manor Lions Club has been serving the community of Manor Texas since 1954. We raise money for Lions scholarships, support the Lions Eye Bank of Central Texas, run Manor Lions Fest, hold bi-monthly fish frys at the Lions Club and run one of the few surviving Turkey Shoots in central Texas every fall.

Burt's Texas Garden: The fall garden is really looking good thanks to the recent rain. Lots of new plants in the ground, and pretty blooms everywhere! This week we will have Yellow Squash, Spaghetti Squash, Turnip Greens, Okra, Swiss Chard, Toscana Kale, and Peppers. In addition, we'll have Dill Pickles, Pickled Beets, Chow Chow, and Farm Fresh Eggs. Temporarily out of B&B pickles.

Burt's Texas Garden: This week we will have Onions, Beets, Potatoes, Yellow Squash, Zucchini, Cocozelle Squash, Acorn Squash, Butternut Squash, Cherry Tomatoes, Peppers, Fresh Herbs, Collard Greens, Swiss Chard, Brussels Sprouts, Okra, and Green Beans. In addition, we'll have, Bread & Butter Pickles, Pickled Beets, Chow Chow, Jalapeno Jelly, and Fresh Eggs.

To look forward to a little later in the season: spaghetti squash, cantaloupes, watermelons, southern peas and of course TOMATOES! Also, the season's first batch of dill pickles will be ready next week (June 10th)! CORN HAS ARRIVED

Squash, Squash, Squash 'tis the season of squash. It won't last. By the time you think you can't eat one more bite it will be out of season. Here are some tips on what to do with left over cooked squash. One of my little ladies told me to just add an egg and some flour to the leftover squash and cook it up in some bacon grease like a pancake. Well, I took it a little further. Make up a batter, like a fritter batter or pancake batter, and try the following add ins:

Pumpkin Pie Spices-clove, cinnamon and nutmeg, then top it with Manor Honey for breakfast. Roasted pecans are good in this one.

Add Italian seasoning and top with a marinara or chopped tomatoes and basil.

Put in chopped parlsey, onion and a little nutmeg and serve with applesauce like latka or potato pancake

Top with grated cheese, I like parmesan or a sharp cheddar

Use your imagination, left over ham or corn or....

THANK YOU FOR ALL YOUR LETTERS, CALLS, AND COURTROOM VISITS IN EARLY MARCH IN SUPPORT OF TECOLOTE FARM. YOUR INPUT CONTINUES TO MAKE A MEANINGFUL IMPRESSION ON THE COMMISSIONERS' COURT.THE COURT HAS RESCHEDULED THE PITRES' DATE ON THE AGENDA TO 4/14, AT WHICH TIME COMMISSIONERS WILL VOTE YES OR NO ON JUDGE BISCOE'S PROPOSED PLAN.Background:Tecolote Farm has been providing locally-grown, organic vegetables to the Austin area since 1993. It is a vital part of and gives much value to our community. Recently they have suffered a water crisis. Water levels in Tecolote Farm's well dropped dramatically, and then went completely dry, soon after Travis County installed nearby high-production wells used to water recreation fields a few miles away. At first, Travis County officials indicated that if they had caused the problem, they would help fix it. Since that time, several highly-qualified hydrogeologists, including ones with extensive experience in studying and working with the local aquifer at issue have confirmed what Tecolote has always known: that the high-volume pumping by the County was at least a significant contributor of what has happened to Tecolote's water supply. Tecolote Farm is just asking for access to the groundwater that they always had, and they are willing to exchange that access for providing produce to County Jail inmates.This coming Tuesday, April 14, the Travis County Commissioners' Court will be considering Judge Biscoe's plan to help solve a problem that they (at least in part) created. This is where your input is needed and we urge you to act via the following options: Option 1. Email the Travis County Commissioners If you have not already sent emails about this issue letting all of the Commissioners, especially Commissioners Eckhardt and Davis, know how important it is to you that the County step up to the plate and help solve preserve this local farm, this is the last week to do so. Do you have formal dresses, shoes, slacks, shirts or accessories that simply hang in your closet? Please consider donating it to the Prom Closet sponsored by the Manor ISD Student and Family Support Services Department. Many students do not attend the Prom (April 25) because of the expense of formal wear. Bring your items to the market or to the Chamber Office in Independent Bank and we will make sure the items are delivered to the Family Support Dept. We have already collected several items and we have room to collect and deliver more.

If you are tired of that plain green salad for dinner you will enjoy the extra nutrition and pizzazz that the figs and walnuts (pecans-buy local) add to this spinach salad. It will complement almost any meal. Enjoy!
Figs, Walnuts, (Pecans) and Spinach Salad
My figs are thumbnail size. I don't know if we can get spinach and figs at the same time. If you have some dried from last year it is all good! Or save this recipe for when the figs come in. DL

Prep and Cook Time: 15 minutes
Ingredients:
½ medium onion, sliced thin (or green, from the market)
2 TBS white wine or apple cider vinegar
1 cup hot water
5 oz baby spinach (from the market)
2 TBS balsamic vinegar
½ tsp honey (from the honey man at the market)
2 TBS extra virgin olive oil
salt and cracked black pepper to taste
8 dried figs, sliced (fresh soon!)
2 TBS chopped walnuts (let's make that pecans)
Directions:
Slice onion and let sit for at least 5 minutes to enhance its health-promoting properties.
Marinate sliced onion in 2 TBS white wine or apple cider vinegar and hot water for 10 minutes while preparing rest of ingredients.
Rinse and dry baby spinach. If you have a salad spinner that is best, otherwise, dry with paper towels. This will avoid dressing getting diluted.
Whisk together balsamic vinegar, honey, salt and pepper, drizzling in the olive oil a little at a time at the end. Toss with rest of ingredients and serve. Serves 4

Yes, you can definitely eat Swiss chard raw. It is a great addition to a green salad. Just cut it up into small pieces that are similar in size to the other greens that you are using in the salad. Not only does Swiss chard adds a nice taste to the salad but it makes a beautiful addition-it's wavy colorful leaves (a mixture of green with either red, yellow, or white) add a visual flair to green salads.
